I LOVE potatoes.
I always have.
Now the husband - not as big a fan. He will eat them but with the enthusiasm that I have. That is why I like Simply Potatoes. They are so darn convenient to have around. When I don't feel well my favorite comfort food is mashed potatoes and corn all mixed up together.


Don't judge.
It's what tastes good to me.
What can I say?

Look at all of those flavors! I like mine traditional.

And when I don't feel well I don't feel like peeling potatoes, waiting for water to boil, mashing potatoes, etc. It's nice to just have a bag of truly SIMPLY Potatoes in the freezer. Not to mention the fact that when one member of a two member household does not like spuds a 5lb bag lasts a long, long time and they often turn into science experiments before they all get used. 

But Simply Potatoes is not just about mashed potatoes, oh no! They have a myriad of varieties - including the NEW Steamables -  in the FRESH section of your grocery store so you can buy them, cook them and BOOM! Potatoes for dinner. That easy!


One night last week after a discussion on Facebook I wanted eggs and scrapple. But eggs and scrapple is not perfect without hash brown potatoes. Lucky for me I had some from Simply Potatoes.

I found the Simply Potatoes Shredded Hash Browns in the refrigerated section of the grocery store in my little tiny town! They were with the bacon and eggs which makes sense. They are very easy to prepare. I put a bit of butter and olive oil in my 8" fry pan and heated it over medium heat. I added the Simply Potatoes and a bit of salt and let them cook for about 8 - 10 minutes until they were nice and brown. I then flipped them over and cooked them on the other side.


While the potatoes were cooking I was cooking my scrapple on the griddle. I sliced it thinly, dredged it in a bit of flour and put it on a HOT cast iron griddle. I let it brown and get crispy on each side. 


When the potatoes where done and the scrapple was just about there I made two eggs, up.

The potatoes went on the plate first.

Then the scrapple.

Then the eggs.

And some of my homemade ketchup. Now to this Philadelphia girl that is heaven on a plate. I completely understand that not everyone will agree with me. I used to order this every time I went out to breakfast. I had one friend that told me that once I cut it up....

....it looked like dog food. I didn't care. I LOVE it. I'm out of scrapple right now. I have to wait until my next trip to the Amish deli. I was so happy when I found a source out here.  Mmmmmm.


But back to the potatoes! They cooked up so quickly and easily and were delicious. They have a true potato taste. The convenience factor is of course, fantastic.
