Win a Cooler of Wholly Guacamole and Salsa



Yesterday I showed you how much fun you can dress up a burger and Wholly Guacamole and Salsa. Today I will show you what I did to a piece of salmon and then give you a chance to win your very own cooler of Wholly fun! (US only)


The hubby loves salmon so I try and cook it for him as often as I can. I saw all of the delicious fresh salsas and new that I could make a fast and easy dinner for him. In my cooler were two different fruit salsas; Red Pepper Mango and Pineapple. I knew either one would be excellent on fish but for this meal I chose the Pineapple.




Each package of Wholly Salsa comes with a very convenient meter on the side so you know just how hot it is going to be.




The salsa was chock full of pineapple and it smelled heavenly.




I went fairly simple with the salmon since the salsa was going to add so much flavor; I added salt and pepper and put it in a hot pan and cooked in on each side for two minutes. Then I grated some fresh ginger over the top of the fish before I put it in a preheated 350° oven for another 5 minutes. (I keep my ginger in the freezer so it is always handy.)




When I was ready to plate I had my jasmine rice ready and put the salmon down and topped it with the Wholly Pineapple Salsa and then added a dash of Wholly Roasted Tomato Salsa for a bit of a smoky addition.





I served it with the hubby's favorite snow peas - fresh from the garden! He said that the two salsas together were delicious and a perfect compliment to the rich fish. I think I will use the mango on the last piece of mahi-mahi I have in the freezer.


This was so easy to make and yet it looks so fancy. He loved the dish and the fruity flavors were a nice change of pace.
